The body is the most complicated machine and food is the most complicated fuel.
Humans need a broad variety of substances to survive and most of them have pros and cons. Fat, in and of itself is neutral. There are specific substances which are fat soluble and therefore you must eat fatty foods in order to acquire those substances. On the other hand, there are specific metabolic processes which are necessary in order to negate some of the harmful effects of fat. It's not that fat, of any kind, is good or bad for you. It's that too much of anything (or not enough) is bad for you. Water can kill you if you drink too much. Different substances have different impacts on different systems in the body. Atherosclerosis is pretty well known and there are a lot of risk factors. Diabetes and cancer fall under the same category. Milk, eggs, steak, cheese, butter, fried chicken - all of them are healthy foods in the right proportions. Some people want to eat philly cheese steak every day for lunch, this is unhealthy. One or two a week, just fine. |

Fried chicken = "healthy"? I guess that depends largely upon your definition of "health". But I agree with the gist of what you are trying to say: "moderation is key". Not only that, but I'd argue that not all foods are healthy for all people; hence, diet should be tailored specifically for the individuals concerned. For instance, although whole wheat products can indeed be healthy to one individual, they may be detrimental to another (i.e. in the case of Celiac disease). |

Very few types of food is unhealthy if you get your ass moving. If you sit about all day crossing your eyes and playing banjo, you're going to get unhealthy no matter what you eat. I have serious doubts towards all these warnings.

Yes, and now there is more understanding that wheat or gluten intolerance can occur along a spectrum, from mild gastric irritation to full Celiac disease. |

Going from one extreme to another due to conventional wisdom being called into question, much less completely disproven, is not exactly rational. And I'm amazed that the role of protein in good physical health is not being discussed in here anywhere, which can be eaten without noticeably increasing saturated fat intake.
Of course. Unused calories get stored and lead to obesity, which is much worse on the heart than saturated alone. |
