    Yes, baste on top of skin. No, don't put any marinade underneath since that will mess up the skin. You can loosen the skin but only to allow better cool airflow to crisp the skin even more. Scoring isn't necessary.

    Great! I'm especially intrigued by the regional usage - wonder how much is from the female east / male west coast. And why the midwest uses online the least (would have guessed the south).

    Async...! I highly recommend it. It's a beautiful book. Very powerful, and quite heartbreaking at times. I hope you enjoy it.

    hey jumping in on that mixer - i bought a KitchenAid Architect, the big one that does not have a flip-up motor. I am liking it real well. the attachments! got the ice-cream maker. Possible to find it for less than $400 at Macy's. yeah it is about the cheesecake too...

    Interesting. I saw 2 people who cooked them at 134 and 135 so I went with that. The inside was still very pink. I cook all my beef steaks at 131 though. I just made a ribeye tonight and it was perfect. I finally think I got the sear right. 1 minute each side and then seared the edges and it was perfect.

    J's Fe is his "weird form of diplomacy" as he calls it. He wants the best for me, but he becomes angry when having to sacrifice any time that could be used for something else. Thank you for the tip about watching for signs of discontent and how to combat it. This will help out a lot with communication, and I think even a little pit stop for J when we are out will help a great deal. Another thing that I do now is look for activities that will satisfy the two of us. I found a beautiful botanical center that provides all of the beautiful scenery and bird and butterfly species to view. It is also quiet, remote, and has tons of benches and rest areas, which is perfect for him. He is thrilled with the idea.
