It's just because sign language is a language within itself. It has many words that do no exist in spoken or written formats, and it lacks some words that are in those formats. Translation always messes with things. Hearing people have a need to have a distinct sign for every word, they want the grammar to be similar to their language, and they want everything to be neat and very sterile, words fitting each thought.
Sign language is very different. Emotions have signs, gestures and facial expressions that have no English translation. Words we have like "to" or "a", don't exist because they aren't really necessary. A lot of the signs for english words are direct, literal translations. The sign for breakfast is literally "morning food". *shrugs* signs change and develop over time and eith regions.

You would think "breakfast" would be a B at your chin, but that means "bitch".
