Chao angh,
Heavenly divine. Where has this blessing been my whole life? At first thought I was wondering what kind of moron would dump a salad inside my soup. Repentence.

Xin Chao! Pho is ok, great with lots of chilies, but it is basically soup of Vietnamese rice noodles and fresh vegetables and herbs and people here eat it almost every day if they are out and about (many tell me they eat rice at home if they can cook there) I only eat pho once in a while because I like more variety in my food. Same with rice.
I can somewhat understand why pho is so wonderful to a Vietnamese person. They are grateful for the food they get. In addition, there isn't as much variety in food as I accustomed to so when Vietnamese people are highly sensitive to pho (or any other dish) that is made a TINY bit differently from what they are used to....and proclaim it as VERY different!

Mmmmmm, pho. Soba noodles, fish sauce, onion, bean sprouts, chillis, coriander (best spice evah) basil (no cilantro, thanks), meatballs.

I like a little extra beef on the side, so I can dip it in the soup while it's still piping hot to par-cook it. Other than that, I don't add much to it. Maybe some Sriracha, bean sprouts, and a few herbs.

There is plenty of variety. Vietnamese cuisine spans everything from a cheap banh mi (pork roll) from a market stall to extravagant 10 course meals. If you're talking about flavours, there's everything from the subtle flavours of a wholesome chao (congee) with gio chao quay (fried bread) to the very flavoursome and filling bun bo hue (spicy beef noodle soup). Sweet flavours are well represented with che (a pretty and fantastic dessert during hot weather). Bitter is not uncommon, kho qua don thit (bitter melon stuffed with meat) is a family meal. Sour can be the main attraction with nem chua (cured pork), or used as an accent, as I'm sure many of you have had lemon with your pho. Salty is predominant, with fish sauce forming the base flavour for many dishes.
Maybe what you're seeing is the 'no one makes pho like mother' effect, wherein restaurant pho just isn't enough. I know it isn't enough for me, not when mum puts all the best cuts of meat into the broth, and we even have ox-tail for dipping into fish sauce or hoisin sauce.
Personally, I do it with a lot of hoisin (some in the broth) and a little sriracha, tripe, and all the herbs and bean sprouts. Yum!

chicken pho. i need to find some. have yet to find a place i can go regularly... i miss all the foods i used to like all being on a few select blocks within walking distance. i'm almost overwhelmed with choice now, but it all takes planning to get to.

I always have that when I go to a Vietnamese restaurant. They're called "meal soups" around here. I'll usually have seafood pho and make sure to have veggies in it.

I've never tried pho simply because the opportunity hasn't been there until recently. I'm noticing where I live that a lot of Vietnamese restaurants are popping up, and I've been planning to do some table hopping to try out the different kinds.
I wish I had Vietnamese friends who could co-sign on what pho is good and what isn't. :(

Pho chin or Pho ga! Pho is the ultimate comfort food. We add lime to ours as well as cilantro, sprouts, Thai basil, etc.

+1 on the mint and limes. I always look forward to throwing in the mint leaves, bean sprouts, and giving that lime wedge a deep squeeze. Who would've thought of adding citrus to soup!
Then of course, a little Sriacha (rooster) sauce. Incredible.

yay on the lime, nay on the sprouts. sprouts are a pointless thing, i think. ew. too plant-y. i feel like i want to take the sprouts home and water them and put them on the sill, not *eat* them... !

I would just get the specialty one that has a little bit of everything. It usually the first choice in most restaurants. Every type of pho pretty much taste the same once you add hoisin sauce to it imo.
I love pho but it's been awhile for since I had any due to a cousin and a best friend that don't like it. That kind of makes me mad. :(

So I had the shrimp spring rolls and a small grilled chicken Pho with all the toppings. Pretty good stuff!
