Best SEO?

So I have to figure out some SEO stuff at work.

Where are some good places to go to figure out what words are most searched for in a particular field?

I'm trying to convince my boss that the best way to go when helping a client start their e-commerce site and select which of their products to feature for the launch is to first select the optimal blend of products based on current popularity from the target audience.

I know you can take a key word and generate additional phrases via WordTracker ... is there any way to do a reverse lookup, so to speak, and just track the common words for particular industries (sorry, non-disclosure clause prevents me from specifics).

I've used this before to generate key word suggestions both from a supplied word and based on googles scan of a given url.

Additionally, the tool will produce statistical information on the various keywords including trend volumes, ad competition, ad position, etc.
