Grilling season is upon us! Celebrate your love for meats of all sorts (I personally love some grilled ribeye steak). Share recipes, grilling tips, funny meat stories (dropped the steak and the dog ran away with it?)

I had some steak with McCormick steak rub, dill, and juice of one key lime for dinner last night. Delicious! For less tender steaks, the citrus juice helps a lot. Rare. The only way.

My favorite is when you slice steak or fish real thin and you "cook" it in a lemon juice marinade. Basically a type of ceviche, I guess.

Oh, and sushi. I love sushi, but I don't get to eat it as often as I'd like.

I love sushi! Just not sea urchin, it was nasty.

I have this great marinade for chicken that I use, grill the chicken, and put it into a salad with lots of fruits and spring mix lettuce.

It's hard to beat a good old steak though. Rub it in a little olive oil. Salt and pepper it then throw it on the flame. Charred on the outside and red in the center. Delicious!:thumbsup:

Ribeye, mmmmm Ribeye. I cook mine with some lawrys season salt, some garlic and pepper. Grill it for about 7 to 10 minutes per side over a low flame, depending on size. Most of my ribeyes are in the 1 pound size. I do the same for T-bones, New York strips. All USDA Choice or better quality, no cheap steaks.

I've got a craving for grilling some Carne Asada, I'm going to have to pick some up from the local carniceria on the way home. Salivating already, need some limes, pico de gaillo, onion, corn tortillas cheese, sour cream - getting hungry........ Throw in a Corona with a lime............mmmmmmm

Smoked turkey sounds good, I haven't smoked a turkey for a long time, too long. Also like them deep fried.

I've never tried grilled craw fish, sounds interesting. I've only had them boiled and they tasted kind of like shrimp, they were somewhat bland.

Must have Carne Asada, that sounds so good today.

Meat is murder.

I think I might finally eat my rattlesnake meat this weekend. I've been waiting for nicer weather so I can skewer is on a stick and roast in in a bonfire. I still insist that I'd eat any (sanitary, non-diseased) mammal, bird, or reptile. Nothin' beats a good steak or burger, though.

I just made some of that the other night, from scratch. I even made my own curry powder (yeah, I'm kinda nuts, but it was worth it).

smothered in barbeque sauce mixed with beer

and gotta have the cajun seasoning and cayenne

Heres a great marinade for any meat except fish.

1 can frozen orange juice.
1 can frozen pineapple juice.
1/2 cup season salt. (lowery's, mccormicks, louisiana any does well)

When juice comes to room temp add seasoning mix well.
Place meat in juice so everything is covered.

I find that if you have tougher meat if you pierce the meat it helps.
For best results put the meat and marinade in the freezer for an hour then put it in the refrigerator until ready to grill. Take directly from the marinade and grill, when you turn the meat brush with marinade or as often as you like. Marinade is sweet, and tangy and will carmalize so use as much as you like. The longer you marinade the more tender the meat.

I grew up in the tropics, with boonies (jungles) that backed up to our houses. We built a clubhouse in the jungle. Great. Then one day the older neighborhood kids decided we should barbecue. Great. Barbecuing was something everyone did all the time. So we went home and raided our fridges, without telling our parents, of course. We started barbecuing, then somehow a fire started, sending us all scurrying out of the boonies like rats. Suddenly, there were firefighters at our barbecue. That was the end of our barbecuing in the boonies. I was probably 7 or 8 years old.

good summer grilling: tempeh slab grilled to nice smokiness, with plenty of warm balsamic reduction to drizzle over top when plated.
serve with crispy fresh summer salad, and a side of, say, strongly seasoned (cinnamon, curry, cardamom,onion, etc) deep orange yam.
Everybody organic.
Heaven.

sorry...couldn't resist. Can't eat bessie. Will go play in a veggie sandbox now.

Ah, the grill. My (ex) wife used to love when good weather was about, as she did not have to worry about dinner.

There are some great marinades out there. McCormick has a really good mesquite, great with either chicken or beef.

I am a bit of a purist when it comes to the grill. I'll use gas if necessary, but much prefer the bricks. Great weather brings with it everyone on the barbie. Its a great time for a bike ride, as you can get a taste (via smell) of everyone else's dinner on your ride, only to make you more excited for dinner when you get home.

In response to the original post, using the BBQ is not limited to great weather. I can remember using the (gas) grill in snowy weather under an umbrella.

I hate the concept of 'OK, you happened to be born in our fields so you are immediately slated for death for my profit'. Actually, the profit part doesn't really bug me (after all, if they were eating it it would still be a profit, just in brown rather than green), I just don't like the concept of 'You were born here so I'm going to tun you into a lot of meat and then kill you'. It just seems inherently wrong to me, somehow.

My grandmother is the same way, eating about anything and everything, possum, squirrel, turtle, etc. You might want to avoid the "water turkeys" as my grandma calls them. She was referring to the crane birds, I'm guessing Heron, my grandpa had killed and brought home - She said it was the worst thing she has ever tried.

Anyways back on subject....I'm with everyone else, give me a nice juicy grilled ribeye. I also like me some good ribs, but I can never seem to get them tender enough, I think I need a better grill. I've tried the indirect heat approach, but my grill doesn't hold in the heat enough to cook unless the meat is directly over the coals.

I'd try it if I had the opportunity. It's probably illegal, though. I'm told that you can't even have your picture taken with a bald eagle in the US.

I'd still be up for trying that, too, since I'm a barbarian and all. But oddly enough, I hate seafood. I'd rather not even be within 100 yards of a lobster.

To hear of your dedication, and committment to consumption of our fellow animals is heartwarming, to say the least. You people do me proud and I salute you! And I promise, by everything that is carnal and voracious within me, to dedicate my upcoming holiday weekend to devouring cows, chickens, pigs, fish (and any other substantive beast within cooking-distance) - along with mass quantities of alcoholic beverages. I will keep my veggie intake down to a minimum so as not to "cross the streams".

You all are truely "my peeps"!

charcoal grilled meat! Nothing like that smell while laying out on the hammock, cooking a nice thick burger slowly over charcoal so it stays juicy in the middle and has a rich mouth watering flavor.

OK, I may be in the minority on this one, but bratwurst, sauerkraut, and a very, very large amount of Franziskaner. Dunkel if I can get it, but I'll drink Hell, too. No problems there. Oh, and apfelkuchen for dessert.

Gyros w/tzatziki sauce! Served with dolmades, hummus and pita wedges and maaaybe some Mythos? Definitely Baklava for dessert.

I sympathize. I really think people who think it is wrong to eat meat are rather pathetic. I'm not opposed to people choosing to be vegetarians, but don't try to guilt trip me because I eat meat. :angry:
